Frequently Asked Questions

How long to cook a roast per kg?
It depends on the meat and doneness: beef runs about 20 min/kg for rare, 25 for medium, 30 for well done, plus ~20 minutes base at 180°C. A 1.5 kg medium roast beef takes roughly 55–60 minutes.
What temperature should I roast at?
180°C (350°F) is the standard for most roasts. A hot 220°C sear for the first 20 minutes then lower gives good browning. A meat thermometer is the only sure test — the timings here are a guide.
What internal temperature means done?
Beef/lamb: ~52°C rare, 60°C medium, 70°C well. Pork: 63°C then rest. Chicken: 74°C throughout. Always rest meat 10–20 minutes after roasting so juices settle.
